Banana Bread (Gluten Free)












I was relaxing, watching the Big Bang Theory when I got a hankering for something sweet!  It's not very often that I have a sweet tooth, I'm more of a salty, savory snacker.  When I do get a sweet tooth, it's pretty fierce!

So I searched the cupboard looking for that perfect snack...

After a few minutes of searching, I was coming up empty handed.   At this point, my sweet tooth was becoming increasingly fierce.



No chocolate, no peanut butter, no ice cream... but I had bananas!  I wasn't in the mood for a smoothie, too cold (but here's a smoothie with bananas in case you are!).  I wanted something warm and comforting.  That's when I had the light bulb moment and decided to make banana bread.  At 10 o'clock at night, on a weeknight might I add.  Crazy...  Maybe!  But it was so worth it.

So here's my recipe for banana bread, hope you enjoy it as much as I did.






If you don't have any cinnamon applesauce, you can add another teaspoon of cinnamon to the bread mix. I recommend reheating single servings in the microwave for 20-30 seconds, if it's been refrigerated.

This banana bread goes great with a hot cup of coffee or tea. My teen, who is anti anything gluten free, gave it a thumbs up by eating half the loaf himself!

  2. We love banana bread in our home! My husband actually has been complaining about his sinuses getting stuffy after we eat wheat, so we are going to give gluten free a try. Thanks for the recipe

    1. Nasal congestion is a sign of gluten intolerance and/or Celiacs. Hopefully omitting gluten will help your husband. Hope you enjoy the banana bread!

    I love banana bread. I always have a few frozen bananas in the freezer ready to make a batch.

    1. The applesauce makes it really moist! I was out of milk, so that's how this recipe was born! I actually prefer it, adds a wonderful flavor too.

    1. Yes it's readily available in most local grocery stores. I used Bisquick's brand. It makes really good pancakes too!
