Cool and Creamy Tomato Salad

I received this beautiful garden fresh tomato from my dear friend, Ms. F.  Which in turn inspired the creation of my simple and quick recipe for a creamy tomato salad.

When I created this garden fresh salad it was a hot, humid 96℉.   The perfect Summer day for a cool, refreshing salad.


 A day later it was pouring with rain, a chilly, damp feel was in the air, only getting to 73℉ that day.

 At publishing time, the temperature had dropped to 69℉, and we were expecting a low of 49℉ that evening.  It was clearly the beginnings of Autumn, as the temperatures began dipping a few degrees more each day.

  I had actually considered scratching this post and moving on to something related to Fall.  But the more I looked at the photo of this sweet tomato, in all it's orange glory, the more I felt it deserved it's spotlight!  In some ways, it kind of reminds me of a pumpkin!  What do you think?

So as we say goodbye to another glorious Summer, I share with you my recipe for Cool and Creamy Tomato Salad.

Cool and Creamy Tomato Salad


Ingredients:

1 large orange Tomato
1 small cucumber
1/2 of a sweet onion (medium sized)
Black Pepper, to taste
1/4 Cup Ranch Dressing, gluten free


 Cut tomatoes into bite size pieces, about 3/4 inch cubes.  Remove skin from cucumber and rub with salt, (helps to remove bitterness) and rinse with cold water.  Cut the cucumber into 1/2 inch slices, then cut each slice into quarters.

Dice the sweet onion.  Add the tomato, cucumber and onion to a small bowl.    Sprinkle with black pepper, to taste.  Pour ranch dressing over all and stir until well coated.  Refrigerate until chilled, about an hour or two.  Enjoy this salad on it's own or as a side dish.
