Beef Tomato
Some days call for a simple, no-fuss recipe.  Today, I'm sharing with you my slow cooker recipe for Beef Tomato.



I love this recipe, it is quick and easy to prepare for your slow cooker, and only requires a few ingredients.  An added plus, it's gluten-free!

Here is what you will need:

  • 1 1/2 lbs. Beef Stew Meat
  • Black Pepper, to taste
  • Sea Salt (fine), to taste
  • 1 Onion, cut into 1/8ths
  • 2 Celery Stalks, chopped
  • 1  14.5 oz. - Can Petite Diced Tomatoes
  • 8 oz. Water



Place stew meat in slow cooker, sprinkle with salt and pepper to your taste. (I used about a 1/4 tsp of each). Add the onion, celery and tomatoes (with juice, don't drain), and the water.  Cover slow cooker with lid, cook on low for 8 hours.  Serve over rice, mashed potatoes, or with a baked potato on the side.

For a variation to the recipe, you could add a few sprigs of fresh herbs, to change the flavor profile of the dish.  What herbs would you add?

  6. This looks deliciously healthy. I read somewhere that the tomatoes and beef go well together because the acidity in the tomatoes brings out the iron in the beef.

  8. This looks so good! I love the idea of throwing it in the crockpot so I can do other things - like play in the garden! 😉
    I would add Rosemary or mexican tarragon - yum!
